Cumberland Sausage With Cherry And maple Syrup

This recipe is a wonderful warming autumn dish and a great way to enjoy fruit with the great British sausage. The sweetness of the cherries and maple syrup are the perfect accompaniment to sausages. This recipe is also great to put into a hot dog roll as well if your cooking for the garden.

Ingredients

  • 3 tbsp of red wine vinegar
  • 8 cumberland sausages
  • 1 tbsp of olive oil
  • 4 medium of red onions, (peeled and cut into 8 equal pieces)
  • 1 tsp of salt
  • 200 g of cherries
  • 2 tbsp of st lawrence gold maple syrup
  • 1 tsp of fresh thyme
  • 1 tsp of fresh rosemary
  • 0.5 tsp of coarse black pepper

Method

  • Step 1

    Place the sausage, onions, oil, salt and pepper into a roasting tray and cook in a pre-heated oven for 15-20 minutes at 180°C
  • Step 2

    Meanwhile cut the cherries in half and remove the stones.
  • Step 3

    When the sausages are golden brown and the red onions are softened add the cherries,vinegar and St Lawrence Gold Maple Syrup.
  • Step 4

    Finally add the roughly chopped herbs and return to the oven for a further 10 minutes.
