Cumin Lemonade

It works beautifully as a mocktail, or you can spike it with vodka or gin. This recipe uses black salt – a kiln-fired rock salt – for a funky aroma and umami depth with a difference! If you prefer, you can use sea salt instead. Serve it in highball glasses, garnished with lemon slices.

Ingredients

  • 1 tsp cumin seeds
  • 10 (approx.) mint leaves
  • 4 tbsp caster sugar, plus extra if needed
  • ½ tsp black salt or fine sea salt, plus extra if needed
  • 3 lemons, 2 juiced, 1 sliced

Method

  • Step 1

    Toast the cumin seeds in a hot, dry pan for 2 mins. Crush to a coarse powder using a pestle and mortar. Add the mint leaves and lightly crush together.
  • Step 2

    Fill a jug with 1L cold water and stir in the caster sugar and black salt (or use fine sea salt), until dissolved. Add the lemon juice, then stir through the mint and cumin mix. Adjust with more sugar or salt, if needed.
  • Step 3

    Add ice and lemon slices, then serve.
