Ingredients
- 4 cod loins
- 4 rice noodle nests
- 4 baby pak choi, halved
- 150g shiitake mushrooms, finely sliced
- 500ml low-salt vegetable stock, hot
- 1 tsp ground turmeric
- 1 heaped tsp ginger paste
- 2 tbsp white miso
- 1 tbsp runny honey
- 1 tbsp reduced-salt soy sauce
- 1 tbsp sesame oil
- 1 tbsp sesame seeds (optional)
- 2 good handfuls beansprouts
- 2 salad onions, finely sliced
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7. Arrange the cod, noodles and pak choi in a large roasting tin; scatter over the shiitake.Step 2
Combine the hot stock, turmeric, ginger paste, miso, honey and soy sauce in a large jug, stir to mix, then pour into the tin. Press the pak choi and noodles down with a fork to submerge, drizzle with sesame oil and pop in the oven for 12 mins.Step 3
Scatter with the sesame seeds (if using), then top with the beansprouts and salad onions. Serve immediately.
