Ingredients

  • 1 egg white
  • 2 tbsp of plain flour
  • 50 g of caster sugar
  • 50 g of roasted chopped hazelnuts
  • 1 punnet of raspberries
  • 2 scoops of swedish vanilla glace
  • 500 ml of alpro soya vanilla drink

Method

  • Step 1

    Whisk the egg white until it stands in soft peaks.
  • Step 2

    Add the sugar a little at a time, whisking well between each addition.
  • Step 3

    Fold in the hazelnuts and flour and mix thoroughly, then place spoonfuls on the prepared baking tray.
  • Step 4

    Bake in the preheated oven for 10-12 minutes.
  • Step 5

    Allow to cool fully before lifting from the parchment.
  • Step 6

    The biscuits can be stored in an airtight container until ready to serve.
  • Step 7

    Blend the raspberries along with a little of the Alpro until smooth.
  • Step 8

    Add the remaining Alpro along with the glace and blend briefly.
  • Step 9

    Pour into tall glasses and serve with the biscuits.
