
Dan Dan Noodles

Tahini is a paste that's made from ground sesame seeds. Along with chilli bean and soy, it creates a deliciously creamy sauce for umami-rich Asian noodles in our version of this classic dish. Ready to eat in just 15 minutes, this meal is packed with punchy, savoury flavour and makes for a real winter warmer. Time and servings

Ingredients
- 1 leek, chopped
- 3 cm of ginger, peeled and finely grated
- 500 g of pork mince
- 3 tbsp of tahini
- 2 tbsp of chilli bean sauce, (we used Lee Kum Kee)
- 2 tbsp of soy sauce
- 1 tbsp of sesame oil
- 1 tbsp of sesame seeds, toasted
- 1 bunch of choi sum, shredded
- 4 portions of egg noodles
- 1 tbsp of vegetable oil
- 1 clove of garlic, finely chopped
Method
Step 1
Bring a large pan of water to the boil and cook the noodles as instructed on the pack, adding the choi sum for the last 2 mins of cooking. Drain and set aside.Step 2
In a wok, heat the vegetable oil over a medium heat and cook the leek, garlic and ginger for a couple of mins to soften. Stir in the pork, turn up the heat and cook, breaking it up as you stir, for about 6-8 mins, until cooked through and there’s no liquid left in the pan. Add the tahini, chilli bean sauce and soy to the pan, then stir in 500ml water, bring to the boil and bubble for a couple of mins.Step 3
To serve, divide the mince mixture between 4 bowls and top with the noodles and choi sum. Drizzle with sesame oil and scatter over sesame seeds, if desired.
