
Denhay Bacon Wrapped Sea Bass with Sun-Dried Tomato Pesto

This pairing of award-winning Denhay streaky bacon with fresh white fish and served with vine roasted tomatoes makes for a satisfying, quick and tasty summer supper.Time and servings

Ingredients
- 4 fillets of sea bass
- 12 rashers of denhay streaky bacon
- 4 tbsp of sundried tomato pesto
- 2 cherry vine tomatoes
Method
Step 1
Preheat the oven to 400F/200C.Step 2
Season the fish with salt and pepper and spread 1tbsp of sun-dried pesto across the top of each fillet.Step 3
Wrap 2-3 strips of Denhay Smoked Streaky bacon around each fillet and season again with black pepper.Step 4
Arrange the fish on a large baking try along with 2 vines of cherry tomatoes, ensuring that they don’t touch each other.Step 5
Bake for 14 minutes and then place under the grill for a further 3 minutes until the bacon is crisp and the tomatoes slightly charred.
