This pairing of award-winning Denhay streaky bacon with fresh white fish and served with vine roasted tomatoes makes for a satisfying, quick and tasty summer supper.

Ingredients

  • 4 fillets of sea bass
  • 12 rashers of denhay streaky bacon
  • 4 tbsp of sundried tomato pesto
  • 2 cherry vine tomatoes

Method

  • Step 1

    Preheat the oven to 400F/200C.
  • Step 2

    Season the fish with salt and pepper and spread 1tbsp of sun-dried pesto across the top of each fillet.
  • Step 3

    Wrap 2-3 strips of Denhay Smoked Streaky bacon around each fillet and season again with black pepper.
  • Step 4

    Arrange the fish on a large baking try along with 2 vines of cherry tomatoes, ensuring that they don’t touch each other.
  • Step 5

    Bake for 14 minutes and then place under the grill for a further 3 minutes until the bacon is crisp and the tomatoes slightly charred.
