Ingredients
- 1 red onion, finely sliced
- ½ lemon, juiced
- 650g frozen french fries
- 200g cooking chorizo, skin removed and meat crumbled into little pieces
- 200g grated cheddar and mozzarella
- 4 drizzles sriracha mayo (approx.), optional
- 1 red chilli, finely sliced
- 1 coriander, leaves only
Method
Step 1
Preheat the oven to 220°C/200°C fan/gas 7 and line a baking tray with baking paper. For the quick pickle, put the red onion in a mixing bowl with the lemon juice and a good pinch of salt and toss. Set aside to pickle; stir occasionally.Step 2
Spread the frozen fries on the lined tray in an even layer and cook as per pack instructions until crisp.Step 3
Preheat the grill to high. About 5 mins before the fries are ready, heat a non-stick frying pan over a medium-high heat. Add the chorizo, leave for 2 mins to heat, then stir-fry for 3-4 mins, until crispy.Step 4
Scatter the chorizo and grated cheese over the fries. Grill for 2 mins or until the cheese has melted.Step 5
Working quickly, drizzle over the sriracha mayo, if liked, and scatter with the chilli, coriander and pickled red onion; serve immediately.
