Level up movie night with the family with the ultimate Doritos sharing platter. A quick and easy update on classic Tex-Mex dish, these Doritos Loaded Veggie Nachos are chock full of bold flavours, gooey melted cheese and a kick of jalapeño spice. Serves 8.

Ingredients

  • 2 tbsp of oil
  • 2 cans of black beans
  • 2 avocados
  • 15 g of fresh coriander
  • 0.25 red onion, finely chopped
  • 1 red chilli, finely chopped
  • 5 cherry tomatoes, finely chopped
  • 0.5 lime, juiced
  • 1 pinch of salt, to taste
  • 1 pinch of pepper, to taste
  • 75 g of mature cheddar, grated to serve
  • 150 g of doritos sour cream and chive dip, to serve
  • 150 g of doritos mild salsa dip, to serve
  • 60 g of pickled jalapenos, to serve
  • 1 bag of doritos

Method

  • Step 1

    Preheat grill to 240C. Heat the oil in a pan, drain the can of black beans and fry on a high heat for 3-4 mins.
  • Step 2

    Remove from heat and smash with fork. Set aside.
  • Step 3

    Smash the avocados with a fork and combine with finely chopped onion, chilli, coriander, tomatoes and lime juice. Season to taste and finish with a drizzle of oil. Set aside.
  • Step 4

    Arrange the Doritos on a serving plate, add the grated the cheese and grill until bubbling.
  • Step 5

    Spoon on refried beans, guacamole, soured cream and salsa.
  • Step 6

    Finish by scattering over jalapeños and any leftover coriander.
