
Double Chocolate Traybake

Nothing says nostalgic puds more than a comforting chocolate sponge with plenty of icing. This super simple cake is perfect for getting the whole family involved. Once you’ve mastered this, why not add your own flavour twists? We love using chocolate orange and a pinch of salt in the icing for a festive twist.Time and servings

Ingredients
- 400g butter, softened
- 250g caster
- 1 tsp vanilla extract
- 4 medium eggs
- 240g self-raising flour
- 80g cocoa powder
- 1 tsp baking powder
- 3 tbsp milk
- 300g icing sugar
- 75g dark chocolate, melted
- 1 handful chocolates to decorate
Method
Step 1
Heat the oven to 180C/ 160C fan/ gas 4. Tip 250g butter into a large bowl with the caster sugar and beat until light and fluffy, about 5 mins.Step 2
Add the vanilla extract, eggs, flour, cocoa, baking powder, milk and a pinch of salt then beat for 3-4 mins until smooth and fully combined.Step 3
Spoon the mixture into a baking tin, roughly 29x25cm, lined with greaseproof paper. Bake for 35-40 mins until risen and a skewer inserted into the centre comes out clean. Transfer to a wire rack to cool completely.Step 4
In a clean bowl, beat the remaining 150g butter with 150g icing sugar until smooth then add the remaining icing sugar and beat for 3 mins until light and fluffy. Pour in the cooled, melted chocolate and gently beat until combined.Step 5
Spread the icing over the cake then decorate with your favourite chocolates. Slice to serve.
