An ancient relative of modern wheat, the spelt grain was widely grown by the Romans.The extra liquid in this recipe bakes a traditional loaf with a crumpety crumb structure. Olive oil and honey combined with spelt give it a rich, delicious flavour.

Ingredients

  • 500 g of doves farm organic wholegrain spelt flour
  • 0.5 tsp of salt
  • 1 tsp of doves farm quick yeast
  • 1 tbsp of honey
  • 1 tbsp of olive oil

Method

  • Step 1

    In a large bowl, mix together the flour, salt and quick yeast.
  • Step 2

    Dissolve the honey in the water and roughly mix it into the flour.
  • Step 3

    When the dough is craggy, add the oil and mix well.
  • Step 4

    Knead or work the dough for a few minutes, then divide between two 500g bread tins or place on a large, well oiled baking tray for an artisan-style loaf.
  • Step 5

    Cover and leave to rise for 25 minutes in a warm place.
  • Step 6

    Bake in a pre-heated oven at 200C/180 Fan/Gas 6 for 25 minutes if using a baking tray, or 40-45 minutes if using loaf tins.
