
Doves Farm Spinach and Ricotta Pasta Parcels

This simple pasta dish uses fresh ingredients for a delicious meal for two, or a dinner party starter.Time and servings

Ingredients
- 2 tbsp of olive oil
- 250 g of doves farm organic pasta flour
- 2 eggs
- 150 g of spinach, cooked and drained well
- 100 g of ricotta
- 75 g of parmesan, grated
- 0.5 tsp of nutmeg, grated
- 0.5 tsp of salt
Method
Step 1
Mix the flour and eggs together to form a dough.Step 2
Knead well for 5 minutes then cover with film and leave for 15 minutes.Step 3
Put the dough on a floured surface and roll it into a large rectangle.Step 4
Cut the dough in half and mark out one piece into 5cm squares.Step 5
Mix together the cooked spinach, ricotta, parmesan, nutmeg, salt and pepper.Step 6
Place a spoonful of the filling on each square.Step 7
Brush water on to the pasta in between the rows of filling.Step 8
Put the second piece of dough on top of the pasta and filling.Step 9
Press the pasta together in rows in between the filling.Step 10
Dust the pasta with flour.Step 11
Cut the dough into 5cm squares around each lump of filling.Step 12
Separate the squares and press around all the edges with a fork.Step 13
Allow to dry for 1 hour or until required.Step 14
Put two litres of water and the salt in a large pan and bring to the boil.Step 15
Add the pasta and boil for 15-20 minutes until cooked.Step 16
Drain the pasta, drizzle with olive oil and serve.
