Doves Farm Spinach and Ricotta Pasta Parcels

This simple pasta dish uses fresh ingredients for a delicious meal for two, or a dinner party starter.

Ingredients

  • 2 tbsp of olive oil
  • 250 g of doves farm organic pasta flour
  • 2 eggs
  • 150 g of spinach, cooked and drained well
  • 100 g of ricotta
  • 75 g of parmesan, grated
  • 0.5 tsp of nutmeg, grated
  • 0.5 tsp of salt

Method

  • Step 1

    Mix the flour and eggs together to form a dough.
  • Step 2

    Knead well for 5 minutes then cover with film and leave for 15 minutes.
  • Step 3

    Put the dough on a floured surface and roll it into a large rectangle.
  • Step 4

    Cut the dough in half and mark out one piece into 5cm squares.
  • Step 5

    Mix together the cooked spinach, ricotta, parmesan, nutmeg, salt and pepper.
  • Step 6

    Place a spoonful of the filling on each square.
  • Step 7

    Brush water on to the pasta in between the rows of filling.
  • Step 8

    Put the second piece of dough on top of the pasta and filling.
  • Step 9

    Press the pasta together in rows in between the filling.
  • Step 10

    Dust the pasta with flour.
  • Step 11

    Cut the dough into 5cm squares around each lump of filling.
  • Step 12

    Separate the squares and press around all the edges with a fork.
  • Step 13

    Allow to dry for 1 hour or until required.
  • Step 14

    Put two litres of water and the salt in a large pan and bring to the boil.
  • Step 15

    Add the pasta and boil for 15-20 minutes until cooked.
  • Step 16

    Drain the pasta, drizzle with olive oil and serve.
