Ingredients
- 190g green tikka paste
- 200g natural yoghurt, plus extra to serve
- ½ lemon, juiced, plus wedges to serve (optional)
- 8 chicken drumsticks
- 1 tbsp groundnut oil
- 300ml chicken stock, hot, plus a splash more if needed
- 350g Tenderstem broccoli
- 4 roti (optional)
Method
Step 1
In a large bowl, mix the tikka paste with the yoghurt and the lemon juice, if using. Add the chicken and toss to coat. Cover and leave to marinate in the fridge for at least 30 mins (or longer if time allows).Step 2
Heat the oil in a pan over medium-high heat. Shake off the excess marinade and brown the chicken in the pan for 5 mins or so. Add the remaining marinade to the pan, along with the hot stock, cover, and allow to bubble over medium heat for 25 mins, turning the chicken once and adding a splash more stock, if needed. Drop in the broccoli for the final 5 mins.Step 3
Serve with more yoghurt, lemon wedges for squeezing over and roti, if you like.
