
Duck Breast with Pomegranate and Star Anise Sauce

Slightly sweet and gently spiced, this duck with pomegranate and star anise sauce is perfect passion food and just the thing to set the tone for a romantic meal at home.Time and servings

Ingredients
- 225 g of new potatoes, diced
- 2 duck breasts, skin scored
- 1 star anise
- 2 tbsp of honey
- 1 sprinkle of fresh pomegranate seeds
- 200 ml of pomegranate juice
- 300 g of green beans, to serve
Method
Step 1
Place the diced potatoes in a saucepan and cover with boiling water. Return the water to the boil and then cook until just tender (approx 6 minutes). Drain.Step 2
Whilst the potatoes are cooking, place a heavy based frying pan over a high heat and cook the duck breasts skin side down for 5 minutes. Transfer the duck to a baking tray and cook in the preheated oven for 10 minutes.Step 3
Add the potatoes to the frying pan and fry in the duck fat until golden, stirring from time to time.Step 4
Place the pomegranate juice, star anise and honey in a pan and boil rapidly until reduced by about half. Keep warm.Step 5
Remove the duck from the oven and allow to rest in a warm place for 5 minutes before slicing. Add any juices from the meat to the pomegranate juice reduction. Season to taste.Step 6
Serve the sliced duck with the fried potatoes and green beans, drizzle with the sauce and sprinkle over the pomegranate seeds.
