This impressive one-pan brunch dish puffs up beautifully in the oven. It's the perfect sweet and savoury start to a weekend morning.

Ingredients
- 12 streaky bacon rashers
- 100g plain flour
- 3 large eggs
- 150ml milk
- Maple syrup, to serve
Method
Step 1
Preheat the oven to 220 ∘ C/200 ∘C fan/gas 7.Step 2
Put the bacon a in a large ovenproof frying pan. Cook in the oven for 15 mins until crispy. Remove the bacon and set aside on a plate, leaving the fat in the pan.Step 3
Meanwhile, make the batter. Put the flour, eggs and milk in a bowl with a pinch of salt. Whisk until smooth and frothy.Step 4
Pour the batter into the hot bacon fat.Step 5
Bake for 20-25 mins or until puffed up and golden brown. Top with the crispy bacon and drizzle with maple syrup to serve.
