This impressive one-pan brunch dish puffs up beautifully in the oven. It's the perfect sweet and savoury start to a weekend morning.

Ingredients

  • 12 streaky bacon rashers
  • 100g plain flour
  • 3 large eggs
  • 150ml milk
  • Maple syrup, to serve

Method

  • Step 1

    Preheat the oven to 220 ∘ C/200 ∘C fan/gas 7.
  • Step 2

    Put the bacon a in a large ovenproof frying pan. Cook in the oven for 15 mins until crispy. Remove the bacon and set aside on a plate, leaving the fat in the pan.
  • Step 3

    Meanwhile, make the batter. Put the flour, eggs and milk in a bowl with a pinch of salt. Whisk until smooth and frothy.
  • Step 4

    Pour the batter into the hot bacon fat.
  • Step 5

    Bake for 20-25 mins or until puffed up and golden brown. Top with the crispy bacon and drizzle with maple syrup to serve.
