Easy Banana Bread

If you're looking for an easy banana bread recipe then look no further. A great way of using over ripe bananas and this recipe can be frozen once baked for the ultimate use-up and prep-ahead dish! Simply slice before freezing so you can defrost a slice at a time. Try replacing 1 tbsp flour for 1 tbsp ground ginger for a spiced version next time.

Ingredients

  • 135g unsalted butter, softened, plus extra to grease
  • 175g Billington's Golden Caster Sugar
  • 2 large free-range eggs
  • 1 tsp nielsen-massey vanilla extract
  • 3 bananas, 2 mashed, 1 halved lengthways
  • 250g self-raising flour
  • 1 tsp ground cinnamon
  • 1 tbsp milk

Method

  • Step 1

    Heat the oven to 170°C/ 150°C fan/ gas 3 ½. Then grease and line a 900g loaf tin.
  • Step 2

    In a large bowl, or a stand mixer, beat the butter and golden caster sugar on a high speed for 3-4 mins, until light and fluffy.
  • Step 3

    Add the eggs one at a time, whisking together between each addition.
  • Step 4

    Add the mashed bananas and vanilla to the bowl then beat again to combine.
  • Step 5

    In a separate bowl, add the self raising flour and ground cinnamon and gently stir together.
  • Step 6

    Add the dry ingredients to the wet ingredients a little at a time and mix gently until fully combined and no lumps remain. Add a splash of milk if the mixture is very thick or stiff.
  • Step 7

    Pour the mixture into the prepared loaf tin and top with the third banana. Then bake for 1 hr, or until a skewer inserted into the centre comes out clean. Remove from the oven and allow to cool in the tin for 5 mins, then remove to a wire rack to cool completely. Slice to serve or freeze
