
Easy Cacao and Walnut Brownies

Using cacao powder means there’s no need to spend time tempering chocolate for these brownies, so you’ll have them ready at top speed. The browned butter adds a nutty, caramelised edge, while the walnuts bring satisfying crunch. Serve warm with a scoop of ice cream for dessert, or cold with a cup of tea for an afternoon snack. Ingredients
- 120 g of butter
- 250 g of sugar
- 80 g of cacao powder
- 45 g of plain flour
- 75 g of walnuts, chopped
- 1 tsp of vanilla extract
- 2 large eggs
Method
Step 1
Preheat oven to 170°C/150°C fan/gas 3½. Line a 20cm square brownie tin.Step 2
In a saucepan melt the butter until it darkens and smells nutty, and set aside.Step 3
In a bowl combine the sugar, cacao powder and ¼ tsp salt, then pour the butter in slowly, whisking to blend.Step 4
Add the vanilla extract, then the eggs, one at a time, beating in between. Next, stir in the plain flour and chopped walnuts until just combined, and spoon into the tin.Step 5
Bake for 20mins, or until a skewer comes out with just a few moist crumbs attached and cracks form across the top. Let it cool before removing from the tin and cutting into 16 squares.
