
Easy Carrot Cake

Ingredients
- 115 g of plain flour
- 250 ml of sunflower oil
- 350 g of caster sugar
- 2 lemons, grated, for the topping
- 225 g of icing sugar, for the topping
- 200 g of self-raising wholemeal flour
- 2 tsp of bicarbonate of soda
- 3 large carrots, peeled and grated
- 4 eggs
- 2 tsp of cinnamon
Method
Step 1
Mix both flours, sugar, cinnamon and bicarbonate of soda together.Step 2
Mix in the carrot and gradually beat in Flora Cuisine and eggs. Pour into a greased and lined 20cm square cake tin.Step 3
Bake in a preheated oven at 180C/ Gas 4, for 45-55 minutes. Cool on a wire rack.Step 4
Use a sharp knife to remove the outer pith and then segment the lemons. Squeeze out the remaining juice and add to the icing sugar in a bowl with the segments. Mix gently and spread over the cake. Sprinkle with the zest.
