
Easy Grilled Peach Melba

Sweet peaches are sautéed in butter and brown sugar, then served alongside vanilla ice cream and raspberry coulis in this easy dessert classic. Peach melba was created in London’s Savoy Hotel in the 1890s by Escoffier, for soprano Nellie Melba.Time and servings

Ingredients
- 2 peaches
- 1 tbsp of lemon juice
- 8 scoops of vanilla ice cream, 2 per serving
- 4 handfuls of raspberries, 1 per serving
- 2 tbsp of unsalted butter
Method
Step 1
Take 2 ripe peaches, stone and cut into wedges.Step 2
Heat 2tbsp unsalted butter in a pan, add the peaches and sauté for 1 min.Step 3
Add 2tbsp brown sugar and cook slowly until lightly caramelised, then stir in 1tbsp lemon juice.Step 4
Serve over vanilla ice cream and top with fresh raspberries. Drizzle over some readymade raspberry coulis, if you have it.
