Ingredients
- 1.5 kg of whole chicken(we used Ocado Roast in the Bag Pork, Sage & Onion Stuffed Whole Chicken)
- 700 g of frozen roast potatoes
- 1 tbsp of olive oil
- 20 g of butter
- 500 g of prepared vegetables
- 1 pinch of fresh nutmeg, grated (optional)
Method
Step 1
Preheat oven to 200°C/180° fan/gas 6. Place the chicken in a bag into a roasting tin and pop it in the oven for 1 hr.Step 2
After 1 hr, carefully cut the bag open with scissors, snip the string that holds the legs together and return the chicken to the oven for another 30 mins so the skin becomes golden and crispy.Step 3
Remove from the oven, cover with foil and allow to rest while you cook the veg. Increase the heat of the oven to 230°C/210° fan/gas 8 and tip the potatoes into a large roasting tin. Cook for 30-40 mins, turning halfway.Step 4
Meanwhile, heat a large pan with the olive oil and butter, add the veg and cook on a low heat for 8-9 mins until tender.Step 5
Carve and serve the chicken, pile on the potatoes and veg. Add a grating of fresh nutmeg, if preferred, and serve with gravy.
