
Ingredients
- 100g frozen edamame beans or peas, cooked and cooled
- 150g cooked king prawns
- 2 salad onions, roughly chopped
- 1 tbsp light soy sauce
- 1 tsp sesame oil
- 1 egg, beaten
- 4 slices bread
- 2 tbsp sesame seeds
- 3 tbsp flavourless oil
- 4 tbsp chilli sauce, for dipping (optional)
Method
Step 1
In a food processor, blitz the edamame, prawns, most of the salad onions (reserve some to garnish), the soy sauce and sesame oil, until combined and finely chopped. Tip into a bowl and mix well with the egg.Step 2
Divide the mixture between the bread slices, spreading to the edges and pressing down firmly. Sprinkle with the sesame seeds, pressing lightly to help them stick.Step 3
Heat the oil in a large frying pan over medium heat. Fry the bread prawn-side down for 3 mins, pressing with a spatula, until hot throughout and golden. Flip and cook for 1 min more or until golden underneath.Step 4
Serve the toasts topped with the reserved salad onions, with chilli sauce for dipping, if liked.
