
Egg and Spicy Cheese on Toast

This is an ideal breakfast for any day of the week. It's quick and easy enough to throw together before work, but it's tasty and satisfying enough for a leisurely weekend brunch, too. With just five ingredients and taking only 20 minutes to whip up, it might well become your new favourite morning meal. Time and servings

Ingredients
- 2 slices of sourdough, bloomer or other crusty white bread
- 100 g of mature cheddar, grated
- 2 spring onions, chopped
- 1 green chilli, very finely chopped
- 1 tbsp of vegetable oil, for frying
- 2 free-range eggs
Method
Step 1
Toast the bread under a medium heat grill until lightly browned. Meanwhile, mash the cheese, spring onions (keep some back to garnish) and chopped chilli together in a bowl. Spread the mixture over the bread and put it back under the grill.Step 2
Heat the oil in a frying pan, crack in the eggs and fry how you like them. We think they’re best with the yolks still runny.Step 3
When the cheese on top of the toast is bubbling nicely, place it on to warm plates.Step 4
Slide the eggs on top, sprinkle over the rest of the spring onions, season and serve.
