Ingredients

  • 15 mint leaves
  • 50ml white rum
  • 50ml elderflower cordial
  • 1 lime, squeezed to give 25ml lime juice, plus a few lime slices
  • 150ml elderflower kombucha

Method

  • Step 1

    Rub the mint leaves between your fingers to release the scent and flavour, then place in a tall glass.
  • Step 2

    Add the rum, cordial, lime juice and a generous handful of ice; stir well.
  • Step 3

    Pour in the kombucha, add a few lime slices; stir and serve immediately.
