
Epic Turkey Sandwich

This Epic Turkey Sandwich from food writer and editor Caroline Morrish ain’t just for Christmas – you can rustle it up any time, using whatever bird or joint you’ve had for Sunday lunch and any other leftovers. Just mix and match what you have in the store cupboard and fridge. Time and servings

Ingredients
- 20g stilton, crumbled
- 1 tbsp mayonnaise
- 1 panini or ciabatta roll, halved
- 40g stuffing, cooked
- 2 pigs in blankets, cooked and halved
- 40g carrots, roasted and chopped (and/or other roasted root veg of your choice)
- 60g roasted turkey, sliced (or cooked ham or beef)
- 30g Brussels sprouts, cooked and shredded
- 1 tsp cranberry sauce
- 1 tsp spiced apple and pear chutney
- ½ tbsp spiced pickled red cabbage
- 1 tbsp tikka masala sauce
- 2 tbsp turkey gravy
Method
Step 1
Mix the stilton into the mayo and spread it onto both halves of the panini.Step 2
In a pan, fry up the stuffing, halved pigs in blankets and chopped roasted roots until crispy (or use them cold if preferred). Layer them up on the bottom half of the panini, with the turkey, shredded sprouts, cranberry sauce, chutney and pickled red cabbage. Pop the other half of the panini on top.Step 3
If you like, stir the tikka masala sauce into the turkey gravy, warm it up and use it for dunking.
