Ingredients

  • 1 tbsp soft cheese
  • 1 tsp lemon juice, plus a little zest
  • 1 tbsp panko breadcrumbs
  • 1 tsp ‘everything’ seasoning
  • 2 skinless salmon fillets
  • 180g grated beetroot and carrot mix
  • 2 salad onions, sliced
  • 5 fresh pickles in garlic and dill, diced
  • 1 handful chopped dill, plus extra to serve (optional)
  • 300g baby potatoes, microwaved
  • ½ tbsp butter

Method

  • Step 1

    Preheat the oven to 220°C/200°C fan/gas 7. In a bowl, mix the soft cheese and lemon juice. In a separate bowl, combine the breadcrumbs and seasoning. Pat dry the salmon fillets with kitchen towel; season with black pepper. Spread each salmon fillet with a layer of the cream cheese mix, then top with the panko mix; bake in the oven for 10 mins.
  • Step 2

    Meanwhile, toss the beetroot and carrot mix with the salad onions, pickles, dill and a little lemon zest.
  • Step 3

    Serve the salmon with the slaw, alongside the microwaved baby potatoes tossed in butter and some more dill, if liked.
