Ingredients

  • 100 ml of cider vinegar
  • 1 tsp of caster sugar
  • 1 tsp of salt
  • 1 red onion, finely sliced
  • 6 sausages (we used m&s posh dog sausages)
  • 6 slices of monterey jack cheese
  • 6 brioche hot dog buns
  • 6 tbsp of tomato ketchup
  • 6 tbsp of mustard (we used french's classic mustard)
  • 50 g of crispy fried onions
  • 3 jalapenos, sliced
  • 10 g of chives, finely chopped

Method

  • Step 1

    Firstly, prepare the quick pickled onions. In a large bowl mix together the vinegar, sugar and salt. Place the finely sliced onion into a sieve over the sink and boil the kettle. Pour the boiled water over the onions to soften them, then transfer them into the bowl with the pickling liquid. Mix them well to combine and then set aside to use later.
  • Step 2

    Preheat the grill. Heat a griddle pan to high and griddle the sausages until they are cooked through. When they're done, remove the sausages from the pan and place onto a baking tray.
  • Step 3

    Lay a slice of the Monterey Jack cheese over each sausage and grill until the cheese has melted.
  • Step 4

    To assemble the hot dogs, slice the buns lengthways to open them up. Place a cheese-covered sausage into each bun and top with tomato ketchup and mustard in a zigzag pattern. Finally, add some pickled red onions, crispy fried onions, sliced jalapenos and a sprinkling of finely chopped chives.
