
Fig and Parma Ham Tart

Ingredients
- 1 handful of pine nuts
- 1 pack of ready rolled puff pastry
- 4 figs
- 150 g of goats cheese
- 8 slices of parma ham
- 1 drizzle of honey
- 1 splash of olive oil
- 1 large handful of rocket
- 1 egg, beaten
Method
Step 1
Preheat the oven to 190°C. Unroll the puff pastry and fold the edges in to form a crust. Prick the base of the tart (not the crusts) with a fork to stop the pastry from rising too much and place on a baking tray with greaseproof paper.Step 2
Brush with egg wash and put in the oven for 10 minutes. Slice the figs into quarters, crumble the goats cheese and slice the parma ham into strips.Step 3
Sprinkle the figs, goats cheese, parma ham, pine nuts, a squeeze of honey and a glug of olive oil over the tart, then bake for a further 6-8 minutes until the figs are soft and the goats cheese has melted.Step 4
Cut the tart into wedges and serve with some rocket scattered all over
