
Filipino Chicken Wings

“This combo of fish sauce, lime, garlic and ginger is lip-smackingly good!” says Manila-born recipe developer and food stylist Kristine Gonzalo-Jakobsson, of her Fish Sauce Chicken Wings, ideal for a Filipino-inspired sharing feast. Try them with Kristine’s Corn Ribs with Spicy Mayo and her Pork Belly Skewers with Adobo Glaze for a change to your usual barbecue fare.

Ingredients
- 3 limes, juiced
- 100ml fish sauce
- 3 garlic cloves, crushed or grated
- 5cm piece of ginger, finely grated
- 1 tsp ground black pepper
- 1 kg chicken wings
- 1 red chilli, sliced
- 2 salad onions, finely sliced
Method
Step 1
Combine the lime juice, fish sauce, garlic, ginger and pepper in a large bowl. Add the wings and toss to coat. Cover and marinate for at least 1 hr or ideally overnight.Step 2
Light the barbecue 30 mins before you start cooking. Barbecue the wings over direct heat (or cook under a medium-high grill) for 10-12 mins, turning, until nicely charred.Step 3
Transfer to a platter; scatter over the chilli and salad onions to serve.
