Fish and Noodle Salad

Ingredients

  • 1 packet of rice noodles
  • 2 tbsp of olive oil, plus a little extra for brushing
  • 1 tbsp of rice vinegar
  • 0.5 tsp of sesame oil
  • 1 tbsp of sweet chilli sauce
  • 130 g of tuna steak, (approximately)
  • 150 g of fresh peeled prawns
  • 130 g of salmon fillet, (approximately)
  • 1 avocado, peeled and cut into small pieces
  • 3 tbsp of pickled ginger, finely sliced (optional)
  • 1 tbsp of tamari
  • 3 spring onions, finely sliced
  • 3 little gem lettuces, leaves separated
  • 4 tbsp of coriander, chopped

Method

  • Step 1

    Cook the noodles according to the packet instructions.
  • Step 2

    While the noodles are cooking make the dressing: mix together the tamari, rice vinegar, sesame oil and sweet chilli sauce.
  • Step 3

    Drain the noodles thoroughly and then pour over the dressing, toss well to mix.
  • Step 4

    Preheat a griddle pan, brush the tuna and the salmon with a little oil and then cook in a preheated pan, turning once until just cooked through.
  • Step 5

    Remove from the pan and flake into chunks before tossing through the noodles.
  • Step 6

    When fully cooled add the prawns, spring onions and avocado to the nddles and toss to mix.
  • Step 7

    Serve oiled into the little gem leaves and topped with pickled ginger, if using.
