
Fish Goujons with Tangy Homemade Tartare Sauce in Brioche Bun

Freshly made tartare sauce makes this easy goujon sandwich extra special. The mayonnaise-based sauce is flavoured with capers, cornichons, lemon and fresh herbs to achieve the perfect balance of salt and sour. If you're serving with sweet potato fries on the side, simply pop them in the oven at the same time as the fish.Time and servings

Ingredients
- 400 g of frozen fish goujons
- 400 g of sweet potato fries(optional)
- 4 brioche burger buns
- 100 g of watercress
- 6 tbsp of mayonnaise
- 2 tbsp of capers, chopped
- 6 cornichons, chopped
- 1 lemon, juiced and zested
- 2 tbsp of flat leaf parsley, finely chopped
- 1 tbsp of fresh dill, finely chopped
- 0.25 tsp of sweet smoked paprika
Method
Step 1
Preheat oven to 200°C/180°C fan/gas 6. Place the goujons on a non-stick baking tray and cook in the preheated oven for 15-18 mins, until crisp and golden. Once cooked, remove from the oven ready to serve.Step 2
While the fish is cooking, make the tartare sauce by adding the mayonnaise, capers, cornichons, lemon, parsley, dill and paprika to a bowl. Stir and season to taste.Step 3
Next, slice the brioche buns in half and toast them under a grill, or in a griddle pan.Step 4
Dollop some tartare sauce into each bun, followed by the goujons and some watercress. Finish with some extra tartare sauce, pop the other half of the bun on top and enjoy.
