You’ll be saving plenty of cooking and cleaning time in the kitchen with this super simple, one-tray bake. Cod loin is seasoned with Middle Eastern spices, tossed together with an abundance of spring vegetables and baked on a single tray - with enough deliciousness to feed the whole family. If you’re into meal prepping, this recipe’s perfect to make ahead at the weekend and then enjoy for lunches or dinners throughout the week.

Ingredients

  • 1.5 tsp of sumac
  • 1 tsp of baharat
  • 1 tin of butter beans
  • 100 g of fresh peas
  • 250 g of cherry tomatoes
  • 1 red onion, roughly chopped
  • 100 g of tenderstem broccoli
  • 1 courgette, thinly sliced
  • 1 red chilli, finely sliced
  • 560 g of cod loin, cut into four pieces
  • 2 tbsp of olive oil
  • 0.5 lemon, juiced

Method

  • Step 1

    Preheat oven to 200°C/180°C fan/gas 6.
  • Step 2

    In a small mixing bowl, add the cumin, sumac, baharat and 2 tsp sea salt and mix together thoroughly then set aside.
  • Step 3

    To a baking tray, add the butter beans, fresh peas, tomatoes, red onion, broccoli, courgette, red chilli and cod. Season the entire tray’s contents with the spice mix, drizzle with olive oil and mix together well.
  • Step 4

    Squeeze the remaining lemon juice over the whole tray, then cover with foil and bake for 20 mins.
  • Step 5

    Remove from the oven, serve and enjoy.
