
Flaked Salmon with Coriander Pesto on Toasted Bloomer

Ingredients
- 4 slices of white bloomer
- 2 salmon fillets, skinless
- 2 vine tomatoes, slices
- 2 tbsp of dijon mustard
- 1 tbsp of mayonnaise
- 2 tbsp of coriander pesto
- 1 dash of olive oil
Method
Step 1
Rub the dijon mustard over the salmon fillets, and season. Pan-fry over a medium heat until opaque half way up the sides, about 4 mins. Flip the fish, and fry for 4 mins more, until cooked through.Step 2
While the salmon cooks, put a griddle pan over a high heat. Lightly brush 4 slices of white bloomer with olive oil. Grill the slices two at a time for 1-2 mins per side, until nicely crisped.Step 3
Spread the mayonnaise on two of the slices. Place a salmon fillet on each (flake, if desired), followed by the tomatoes and coriander pesto, and top with the remaining slices of griddled bloomer.
