Flødeboller are Scandinavian chocolate coated marshmallow treats, and we can’t get enough of them. Our version uses marshmallow meringue instead of the classic recipe for a speedier version and shop-bought biscuits instead of making our own. Serve with coffee, hot chocolate or bring to the bake sale to impress your friends.

Ingredients

  • 2 egg whites
  • 100g granulated sugar
  • 1 tbsp golden syrup
  • 18 Oreo Snowy Enrobed White Chocolate Coated Biscuits
  • 100g dark chocolate, melted
  • M&S Peppermint Bark and M&S Caramel Crunch, finely chopped

Method

  • Step 1

    Put the egg whites, sugar and golden syrup in a heatproof bowl set over a pan of simmering water. Using an electric handwhisk, whisk for 7-8 mins until thickened to stiff peaks.
  • Step 2

    Remove from the water and continue whisking until the marshmallow meringue has cooled, is bright white and very stiff. Transfer to a piping bag fitted with a round nozzle.
  • Step 3

    Set a wire rack over a baking sheet. Spread the biscuits over the rack then pipe the meringue onto each to make a hat shape. Leave in a cool place to set, about 1-2 hours.
  • Step 4

    Once set, spoon melted chocolate over each hat then sprinkle with peppermint bark, caramel crunch or leave plain. Leave to set.
