
Forest Fruits and Pepper Syrup

Sweet and versatile, this Forest Fruits and Pepper Syrup is a wonderful addition to drinks. Stir into a smoothie or milkshake, mix with sparkling water, or add to still white wine for a twist on a kir. For something a bit different, try it in mixologist Kate Hawkings’ Black Forest Gateau Shot, or simply pour over ice cream for a quick dessert. To keep the syrup at its best, sterilise your storage bottles by washing them (and their lids), then putting on a tray in the oven at 180°C/160°C fan/gas 4 for 15 mins.Time and servings

Ingredients
- 500 g of frozen black forest fruits
- 250 g of caster sugar
- 3 tsp of ground black pepper
Method
Step 1
Gently heat all the ingredients in a pan with 300ml water until the sugar has dissolved. Allow to simmer for 5 mins. Set aside to cool completely.Step 2
Strain through a fine sieve, then pour into sterilised bottles. Keeps for 1 month in the fridge.
