Ingredients

  • 2 eggs
  • 1 splash milk
  • 1 knob butter
  • 3 hot cross buns of your choice, halved
  • 4 streaky bacon rashers
  • 2 (approx.) good drizzles maple syrup

Method

  • Step 1

    Crack the eggs into a bowl and beat with the milk and a pinch of salt.
  • Step 2

    Melt the butter in a frying pan over medium heat. Briefly soak the bun halves in the egg mixture, then fry until golden on both sides (you may need to do this in batches).
  • Step 3

    Meanwhile, fry the bacon in a separate pan until crispy.
  • Step 4

    To serve, arrange the bun halves in stacks, top with the crispy bacon and drizzle generously with maple syrup.
