
Fried Aubergine

This fried aubergine is a Middle Eastern-inspired recipe which uses a single aubergine to make a show-stopping side dish. Ingredients
- 1 large aubergine, cut into 1cm slices
- 1 tbsp of olive oil
- 4 garlic cloves, finely chopped
- 0.5 tsp of coarse ground black pepper
- 1 tsp of ground sumac
- 1 tsp of ground cumin
- 1 tbsp of cornflour
- 1 litre of vegetable oil, for frying
- 1 tbsp of rose harissa paste
- 0.5 lemon, juiced
- 1 tsp of honey
- 3 tbsp of pomegranate seeds
Method
Step 1
Place the aubergine slices in a large mixing bowl and add the olive oil, garlic, sumac, cumin, and season with salt and pepper. Mix together well ensuring the aubergine slices are evenly coated in the spices. Then add in the cornflour and mix again.Step 2
Place a large, deep frying pan over a medium high heat. Add vegetable oil to a depth of 1cm.Step 3
Turn the heat up to high and fry the aubergine slices in the hot oil in batches for 5 mins on each side or until golden brown. Drain on kitchen paper to soak up any excess oil.Step 4
Add the rose harissa paste, lemon juice and honey to a ramekin and mix together with a fork. Transfer the aubergine to your serving plate, drizzle over the harissa sauce and top with the pomegranate seeds.
