Frittata di Pasta

A new take on cheesy pasta is always welcome, and this Frittata di Pasta even uses up leftovers. This recipe is inspired by traditional Italian ‘spaghettone’, a dish using leftover spaghetti mixed with beaten eggs then fried. We’ve boosted the cheese factor with grated cheddar, mozzarella and parmesan for ultimate indulgence, for a meaty twist try this Spaghettone Frittata. Ingredients

  • 3 medium eggs
  • 60g grated cheddar and mozzarella, or 30g of each
  • 40g grated parmesan
  • 300g cooked spaghetti
  • 2 tbsp olive oil
  • 10g basil leaves (optional)
  • 125g pizza or pasta sauce, warm or cold

Method

  • Step 1

    Beat the eggs with freshly ground black pepper. Add the cheeses and mix again.
  • Step 2

    Tip in the cooked pasta (see Tip) and mix well to coat.
  • Step 3

    Heat the oil in a large frying pan over a medium heat. Using tongs, or fork and spoon, add an eighth of the spaghetti mix to the pan and twirl to make a circle. Cook for 3 mins on each side, squashing down with a spatula to help flatten them until golden, crisp and cooked through.
  • Step 4

    Continue with the remaining spaghetti – you will need to this in batches, depending on the size of your pan – and mix the spaghetti between each addition to make sure it’s well coated before adding to the pan.
  • Step 5

    Serve scattered with basil and tomato pizza or pasta sauce for dipping.
