Not only does this Frozen Fruit and Yoghurt Bark look pretty as a picture, it’s healthy too – providing 1 of your 5 a day – and so simple to make. Whipped up by food stylist and recipe developer Kristine Jakobsson, it can be kept in the freezer for a cheeky snack or served up as a tray so everyone can tuck in and break off a shard (or two!). Ingredients

  • 450g 5% fat natural greek strained yoghurt
  • 2 tbsp runny honey
  • 2 tbsp almond butter
  • 250g raspberries
  • 1 banana, sliced

Method

  • Step 1

    Line a large baking tray with baking paper. In a mixing bowl, combine the yoghurt with the honey; spread it evenly over the tray.
  • Step 2

    Add the almond butter in small dollops, then gently swirl it into the yoghurt with a knife. Scatter over the raspberries and banana.
  • Step 3

    Freeze for at least 4 hrs or overnight. To serve, remove it from the freezer and break into shards with a table knife.
