Whether you’re after something tasty to top your brekkie yoghurt or porridge, or a handy on-the-go trail mix that you can nibble when hunger strikes, this healthy Fruit and Nut Breakfast Topper ticks the boxes. Created by food editor and recipe writer Lucy Jessop, it’s vegan, gluten free and simple to adapt using whatever nuts, seeds and dried fruit you have knocking about. This makes enough for 18-20 servings.

Ingredients
- 350g mixed nuts, roughly chopped
- 100g mixed seed toppers
- 1 tsp rapeseed oil
- 1.5 tsp ground cinnamon
- 80g raisins
- 100g dried apricots, roughly chopped
- 25g dried coconut flakes
Method
Step 1
Preheat the oven to 200°C/fan 180°C/gas 6. Combine the mixed nuts and seeds in a bowl, and drizzle over the oil; mix well to coat. Sprinkle in the cinnamon and mix again.Step 2
Spread the mix out in a single layer in a large shallow roasting tin (or use 2). Bake for 5 mins; stir, then bake for another 5 mins until toasted.Step 3
Allow to cool, then add to a bowl with the raisins, chopped apricots and coconut flakes. Store in an airtight container for up to 10 days.
