Fruity Layer Lollies

This is our take on a childhood favourite, with three layers of fresh flavours.

Ingredients

  • 200 g of strawberries, hulled and roughly chopped
  • 200 g of kiwi fruit, peeled and roughly chopped
  • 1 tsp of caster sugar
  • 200 ml of freshly squeezed orange juice, (from approx. 1-2 oranges, or use ready-made fresh juice)

Method

  • Step 1

    Put the strawberries into a jug or small bowl and whizz to a fairly smooth purée using a stick blender. Divide between 6 x 100ml lolly moulds and freeze for 1 hr.
  • Step 2

    Put the kiwi into a jug or small bowl and use a stick blender to whizz to a fairly smooth purée. Stir in the sugar, then divide between the lolly moulds, layering on top of the strawberry. Freeze for 30 mins, until semi-frozen.
  • Step 3

    Pour the orange juice into the moulds, on top of the kiwi layer, then add the lolly sticks. Freeze for 2 hrs, or until firm.
