
Fruity Mince Pies

If you’ve ever wondered why anyone would go to the trouble of making their own mince pies, you’ve now found a very good answer to that conundrum. These fruity mince pies not only include the mouthwatering M&S Collection Brandy & Clementine Mincemeat, but have the very welcome addition of fresh blueberries and orange. Plus, they only take 10 minutes to prepare, followed by 20 minutes in the oven. There’s never really a bad time to eat mince pies, but when you’ve actually made them yourself, we suggest serving mouth-wateringly warm from the oven. As an alternative to cream or brandy butter, you could serve with our Easy-peasy Salted-caramel Ice Cream.Time and servings

Ingredients
- 500 g of shortcrust pastry
- 1 sprinkle of plain flour, for rolling out
- 300 g of mincemeat
- 150 g of blueberries
- 1 orange, grated zest
- 1 egg, beaten
Method
Step 1
Roll the pastry out on a lightly floured surface until about the thickness of a 2 pence piece. Stamp out discs and use to line the tins.Step 2
Mix the mincemeat, blueberries & orange zest together. Divide this mixture between the pastry cases.Step 3
Chill whilst you cut the lids.Step 4
Re-roll the pastry scraps and stamp out enough lids to cover the pies.Step 5
Brush a lid with egg, place on top of a pie egg side down, and press to seal. Repeat with the remaining lids then brush them all with egg to glaze.Step 6
If time allows chill for 30 minutes before baking in a preheated oven at 190c/Gas5 for 15-20 minutes until golden and crisp.Step 7
Remove from the tin and cool on a wire rack.
