
Frying Pan Pizza with Figs and Garlic Jam

We used our new favourite ingredient, garlic jam, as the base for this pizza. But any onion chutney or chilli jam would work. Fig slices and walnuts make for a classy pizza topping, although any of your favourite toppings will work well. Serve in crispy slices.Time and servings

Ingredients
- 1 fig, sliced
- 1 handful of walnut pieces
- 1 tsp of baking powder
- 1 handful of rocket
- 1 tbsp of olive oil, plus a touch more to fry the dough
- 3 tbsp of garlic jam
- 300 g of white spelt flour
Method
Step 1
Preheat grill to medium-high. In a food processor, pulse the spelt flour, baking powder, 150ml warm water, olive oil and a little salt until a ball forms.Step 2
Put a frying pan over a medium-high heat. Halve the dough and roll each half out on a floured surface into an 8mm thick circle the size of your pan.Step 3
Add some oil to the pan and cook the dough for 4 mins, while you top the pizza however you like – we chose garlic jam, slices of fig and walnut.Step 4
Put the pan under the grill for around 8 mins, until bubbling and crispy. Finish with a handful of rocket.
