These Sweet & Sour Cashews are a moreish combination of buttery nut and tangy tamarind, with a hit of chilli. Ingredients
- 250 g of unsalted cashew nuts
- 0.25 chilli powder
- 1 tbsp of soy sauce (or tamari if required for gluten free)
- 1 tsp of tamarind paste
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4. Line a baking tray with baking paperStep 2
In a bowl, toss the cashews with the chilli powder, soy sauce and tamarind until coated. Spread out on the baking tray and roast for 8 mins, then cool. The nuts keep in an airtight container for 1 week.
