
Garlic & Guajillo Chicken Fajitas

These garlic & guajillo
chicken fajitas are a tasty way to serve chicken, fish or beef. Simply combine
the meat or fish with the dry rub and leave to marinade while you prepare the
other bits and pieces.Time and servings

Ingredients
- 1 yellow pepper, thinly sliced
- 6 tortillas
- 1 drizzle of gran luchito salsa, to serve (optional)
- 400 g of chicken breast
- 1 tsp of olive oil
- 1 red onion, thinly sliced
- 0.5 tub of gran luchito garlic & guajillo fajita & taco mix
- 1 dash of guacamole, to serve (optional)
- 1 handful of fresh coriander, to serve (optional)
- 1 fresh lime, cut into wedges (to serve)
Method
Step 1
Cover chicken breast with the Garlic & Guajillo Mix, toss until covered.Step 2
Heat the olive oil in frying pan over medium heat.Step 3
Add the red onion and yellow pepper and cook for 10 minutes.Step 4
Add the chicken strips and cook for another 7-8 minutes.Step 5
Remove from the heat and leave to rest for 3 minutes.Step 6
Serve spooned into warm wheat tortillas with guacamole, fresh coriander, lime wedges and Gran Luchito Tomatillo Salsa.
