
Garlic and Parsley Beef Koftas

Try this simple kofta using minced beef, red onion, garlic and parsley from M&S. You can mix things up with an additional sprinkle of Morrocan ras el hanout spice blend in the mixture or add a pinch of dried mint and red pepper flakes for a Greek-style beef kofta. Ingredients
- 200 g of tzatziki
- 4 tbsp of pomegranate seeds
- 25 g of flat-leaf parsley, ½ finely chopped and ½ leaves picked
- 165 g of flame-baked rotis, warmed
- 500 g of beef mince
- 1 red onion, ½ grated and ½ finely sliced
Method
Step 1
Mix the beef, grated onion, finely chopped parsley and season generously. Divide into 8, then shape each piece around a skewer.Step 2
Fry the koftas in 1 tsp olive oil over a medium heat for 8-10 mins or until just cooked through, turning frequently for an even golden colour.Step 3
Serve on warm roti with tzatziki, sliced onion, parsley and pomegranate seeds.
