Try this simple kofta using minced beef, red onion, garlic and parsley from M&S. You can mix things up with an additional sprinkle of Morrocan ras el hanout spice blend in the mixture or add a pinch of dried mint and red pepper flakes for a Greek-style beef kofta. Ingredients

  • 200 g of tzatziki
  • 4 tbsp of pomegranate seeds
  • 25 g of flat-leaf parsley, ½ finely chopped and ½ leaves picked
  • 165 g of flame-baked rotis, warmed
  • 500 g of beef mince
  • 1 red onion, ½ grated and ½ finely sliced

Method

  • Step 1

    Mix the beef, grated onion, finely chopped parsley and season generously. Divide into 8, then shape each piece around a skewer.
  • Step 2

    Fry the koftas in 1 tsp olive oil over a medium heat for 8-10 mins or until just cooked through, turning frequently for an even golden colour.
  • Step 3

    Serve on warm roti with tzatziki, sliced onion, parsley and pomegranate seeds.
