
Garlic Confit

Whether you have a glut of garlic or just fancy trying something new this garlic confit recipe is worth putting to the test. It’s so simple and such an easy way to add warming garlicky goodness to dishes. Try a few cloves smushed on toast with a little creamy goats cheese and parsley fried mushrooms for brunch or add to softened butter with plenty of herbs to make the ultimate garlic bread. We love the oil drizzled over pizza, in salad dressings and in stir fries, too.Time and servings

Ingredients
- 350 ml of olive oil
- 4 garlic bulbs, cloves separated and peeled
- 4 sprigs of rosemary
Method
Step 1
Put the garlic cloves, rosemary and oil into a small pan over a low heat and cook until a few bubbles come to the surface, making sure it doesn’t come to a simmer. Reducing the heat if necessary.Step 2
Allow to cook for 30 minutes, or until the cloves are soft. Remove from the heat and allow to cool for 10 minutes.Step 3
Carefully pour the oil and the garlic cloves into the sterilised jar and seal. Once opened keep in the fridge and use within 3 months.
