This 100 garlic clove roast chicken from MOB will change your roast dinners forever. Garlic and chicken stock make the most moreish gravy imaginable and it’s really quick and easy to prepare. 100 cloves may sound like a lot, but once it has been gently cooked and softened in the oven, the flavour gets lovely and mellow.  It’s all made with incredible value Ocado ingredients, this is a recipe that you’ll keep going back to. Superb as the centrepiece of a warming winter roast dinner with all the trimmings, or served in the summer with a selection of salads, this is roast chicken with a twist of flavour that the whole family will love.

Ingredients

  • 1 whole chicken
  • 100 cloves of garlic, peeled
  • 1 bunch of thyme, leaves picked off
  • 1 bunch of parsley, leaves picked off
  • 500 ml of chicken stock
  • 2 tbsp of olive oil
  • 2 lemons

Method

  • Step 1

    Preheat the oven to 170°C/150°C fan/ gas 3. Brown the chicken all over in an oven proof dish that can hold the chicken and has a lid.
  • Step 2

    Once the chicken is browned all over, place the garlic, thyme and parsley stalks around the chicken. Add the stock, 2 tbsp olive oil and a generous pinch of salt and pepper. Bring the mixture to a gentle simmer.
  • Step 3

    Pop the lid on the pan and roast in the oven for an hour. Turn the oven temperature up to 220°C/200 fan/gas 7.
  • Step 4

    Remove the lid from your dish, then return it to the oven for 20 mins to crisp up the skin.
  • Step 5

    Squeeze the juice of 1 lemon through the sauce and add some chopped parsley. Carve up and serve with some crusty bread and the remaining lemon wedges. Method
