
Giant Seeded Crackers

Ingredients
- 70g sunflower seeds
- 70g pumpkin seeds
- 50g chia seeds
- 2 tsp soft light brown sugar
- 50g cornflour
- 2 tbsp extra-virgin olive oil
Method
Step 1
Preheat the oven to 180°C/160°C fan/gas 4 and line a 30cm x 20cm baking tray with baking paper.Step 2
In a large bowl, combine the sunflower seeds, pumpkin seeds, chia seeds, soft light brown sugar, cornflour, extra-virgin olive oil and 180ml just-boiled water; leave to stand for 10 mins.Step 3
Using a wet spatula, spread the mixture over the prepared tray; place another sheet of baking paper on top and roll the mixture out thinly. Bake for 50 mins, until golden (rotate the tray after 30 mins, unless you’re using a fan oven).Step 4
Remove from the oven and leave to cool and harden. When fully cooled and crisp, break into pieces. They’ll keep in an airtight container for up to 1 week.
